In 2017, he opened Holbox, a celebrated Mexican seafood spot in LA's Mercado La Paloma, earning accolades like Michelin Guide California Bib Gourmand. Despite no formal culinary training, Cetina's passion for seafood, developed on the Yucatan coast, defines Holbox's menu, featuring casual counter-service and acclaimed tasting menu dinners. Cetina was a 2023 James Beard Finalist for Best Chef California.
